When it comes to rum cocktails, a Mojito is a favorite for its light, refreshing taste but if you want to step it up a notch, try the Moroccan Mojito.
Prior to a Zoom meeting featuring the foreign minister of Morocco, I was asked to come up with a cocktail recipe that the attendees could all enjoy while listening to his comments. I felt that to honor the topic, it should give a sense of Morocco, including some popular Moroccan ingredients. The result is this wonderfully refreshing cocktail, featuring light and dark rums, mint and sugar along with cardamom pods, orange-flavored liqueur and rose water. Talk about sensational! If you love rum drinks, this must be on your list!

Moroccan Mojito
Makes: 4 servings

Ingredients
- 19 fresh mint sprigs, divided
- 1/2 cup sugar
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 10 cardamom pods, cracked
- 2/3 cup light rum
- 1/4 cup dark rum
- 2 tbsp orange-flavored liqueur
- 1/2 tsp rose water
- Ice
- Chilled sparkling water
- Using back of spoon or muddler, mash 15 mint sprigs, lemon juice, lime juice and cardamom pods in a cocktail shaker, about 3 min. Add light rum, dark rum, orange liqueur and rose water. Stir until sugar dissolves, about 2 minutes. Strain rum mixture into pitcher.
Instructions
Fill four 8-oz glasses with ice. Divide rum mixture among glasses. Top with splash of sparkling water; garnish each with mint sprig and serve.
